Like the name suggests sweet potatoes and pumpkin are the highlighting elements in this healthy, vegan, plant based patties.

Sweet potato pumpkin patties(Vegan) are one of those creative vegan recipes that pleasantly surprise you with its explicit delicious taste. Plant based meals can be pretty creative if you set to look at combining flavors.Sometimes, the most unexpected pair of combination works out outrageously delicious that makes you forget your meat based meals. For a non vegetarian like me, I never much indulged into plant based meals apart from the regular recipes .A little bit of research unraveled the beauty of this diet, pushing me in creating unique flavors that work out to a great recipe.
Likewise, sweet potato never was a part of my diet, never liked it as a veggie but with this beauty, I have  started blending sweet potato with other ingredients to arrive at a deliciously pleasant flavor. Versatile as it is, sweet potato actually is adaptable to both sweet and savory dishes and gives out a deliciously sweet taste.With pumpkin, which is another vegetable that falls into my not so favorite list of food, these patties are like a revelation.An unprecedented taste, unique and distinct . A very discerning flavor of the sweetness from the sweet potato, the bonhomie of these two nutrient rich vegetables is a clear winner.With additional spices ,that you could work on your own depending on the kind of flavor you wish for, that can be shallow fried,baked or sir fried.either ways, they are great as a prize winning patty.
As an anytime snack or even a light meal with a yogurt mint dressing, and salads by the side they are perfect for a light meal if you are on a dietary transition to lighter healthy meals .

And,if you love your meat or not, these are an absolute try, just for its fantastic taste and of course the benefits of the sweet potato and pumpkin that boosts your system.

These patties are so versatile that you can throw in any spices or herbs that you wish to create an unique flavor. You can add in either chickpea flour or cornflour as the binding agent, will just make marginal difference in taste. I tweeked this towards a slightly Indian taste and hence used Besan nd cumin powder. You could also use cornflour and other herbs like thyme, rosemary to showcase a different flavor

Nutrient rich, high fiber and enriched with vitamin C sweet potato is a great option to include in meals anyways.So is pumpkin.the benefits are endless.Together, they work out to conceive a patty that not only fortifies you with boosters for your system but creates a great taste that is so versatile.
I think, this one is worth a try.Whether you are a follower of vegan, gluten free, keto or  regular meat based dishes, this recipe is not just a delight for the taste buds but will enrich you with its massive storage of nutrients.Who said healthy cannot  be delicious?

Sweet Potato Pumpkin Patties
 
Sweet Potato Pumpkin Vegan patties is filled with nutrients and is a healthy snack which can be made in a jiffy. Made with just a few ingredients, it is vegan and grain free . Fortified with nutrients, the sweet potato lends a beautiful subtle sweetness to the patties that blends with the pumpkin.

Ingredients
  • Sweet Potato(Steamed) 1 cup
  • Pumpkin(Steamed) 2 cup
  • Chopped or crushed garlic few
  • salt as per taste
  • Cumin powder 1 tsp
  • Parsely few
  • Chickpea flour/ Cornflour ½ cup
  • Breadcrumbs/cornflakes/oats For Rolling
Instructions
  1. Steam the sweet potato and pumpkin
  2. Mash them along with garlic, cumin powder, salt, parsley, Besan
  3. Make patties and let them chill in the refrigerator for 30 minutes
  4. In a wide plate drop some breadcrumbs or crushed cornflakes or plain oats
  5. Roll the patties on both sides , dust off the extra, and shallow fry on both sides until crisp
  6. You can also bake them or air fry them
  7. Enjoy with a mint yogurt dip or any other dip of your choice
