Hello to a beautiful new year. Welcome 2019. As I bid adieu to beautiful memories from the past year, its time to make new resolutions and a new start to a fantastic life.
And as with resolutions, my eating goals will surely focus around healthy food, low on oil and fats. So my first post in this new year brings together an amalgamation of few basic ingredients to recreate the popular greek salad with a twist by adding Quinoa to it.Thus a gorgeous healthy salad called as the Quinoa Greek Salad backed by nutrients.
Quinoa ,called as the superfood grain is here to stay. Packed with nutrients, its making its appearance across varied categories now.Simple, fresh and healthy is what it can be termed as .As a super grain , encased with proteins, its ideal to go in salads soups, patties, roast poultry or even as khichdi when in comes to integrating in Indian cuisine. As a replacement for rice, its not only lighter but healthy as well. I often like to add it to my salads and make a wholesome meal out of it just like this quinoa greek salad.
And if you haven’t yet tried out quinoa as yet, then the best for a beginner would be to pair it with salad for a start.Take an easy salad, mix with quinoa and a familiar dressing, it takes the salad yo a different level of satiating your palate.
Salads, desserts, khichdi, and all kinds of dishes that suddenly seem to find a new life with the use of quinoa. As a replacement for rice, it acts like a great revelation.
This is an absolutely easy salad , where the nutrient dense quinoa is bunged into the quintessential greek salad. With a familiar taste , of the very popular greek salad, quinoa adds a certain texture to it and makes it fuller to be called as a wholesome full meal in itself perhaps.
Absolutely easy, it just takes about a few minutes to assemble it up. Arrange the salad ingredients, and add blanched and strained quinoa to it. Serve and Enjoy. Sometimes its those small wonders that brings in so much joy.This one is like that. The quinoa adds so much more nutrients to the Salad, and of course a chewy nutty flavor to the overall dish.And its so simple that it hardly takes a few minutes to assemble this masterpiece.
The only tussle is to ensure that quinoa is cooked to the right texture for it to lend that exact flavor.Not too mushy or overcooked, nor under cooked, it has to be perfectly done with a certain chewiness , that evokes a nutty flavor.
The perfect way to cook quinoa is to take double the quantity of water to quinoa, boil it on medium flame.Let the water completely absorb the quinoa. Switch off the flame and cover it with a lid, so that the quinoa cooks in the steam. Mixed with a dressing, it has the capacity to fulfill as a wholesome meal as well.
So , either for a weekday meal or a side dish or just as a fun dish, this one is a winner.
- 1 cup Quinoa
- 2 cups water
- 1cup cherry tomatoes
- ⅓rd cup Olives
- ⅓ rd cup Feta Cheese
- 1 cup red onions
- 1 cup Cucumber
- Few lettuce leaves(optional)
- For Dressing
- Olive Oil ¼th cup
- Lemon Juice 3 tbsp
- 1 tsp dried oregano
- Mix tomatoes, olives, onions, cucumber in a bowl
- Add the cooked quinoa and feta cheese
- Pour the dressing and toss
- Serve and enjoy
