Till recently black rice lived in a state of anonymity , inspite of having a decent visibility in north east india. Mostly known as Chak hao, it is a popular rice in Manipur, now cultivated in other parts of north east including Assam as well.

Suddenly black rice seems to be trending due to its high nutrients.In between white, brown and black rice, it is clearly black rice that is the winner when it comes to nutrients.
Packed with nutrients , this rice is black in color but gives out a beautiful purple hue when cooked.Unlike white rice, this one us rather chewy with a slight sweetness, which is why it is best paired with other dishes and not really consumed as a main-course perhaps. Hence black rice in this salad is a beautiful combination.

Mostly, the black rice kheer is the best that brings out its flavor, more then anything else.

And to make it interesting I have  roasted the sweet potatoes and added kale leaves to the salad as well. Roasting brings in a beautiful earthy flavor to the sweet potatoes apart from making them soft. You can either bake, roast or steam them. The beautiful dressing makes this a healthy one time meal as well. Honey mustard dressing is one dressing that is so versatile, that it has the capacity to uplift even a boring salad to the next level.Here complimented by olive oil, lime juice, this honey mustard concoction works like magic to create a phenomenal salad that can fortify your taste buds as a great diet friendly meal.

There isn’t any rules to what goes into this fabulous salad.Sweet potato and Black rice are the domineering elements that I wanted to focus, hence the additions are as per my liking.You could add in anything that you wish as long as there is a match of flavors amongst all the ingredients. Notwithstanding, I think almonds can replace walnuts and lettuce can substitute for kale leaves as well.Perhaps avocados could be a great choice as well.

Whatever it is, this is a beautiful salad that is sure to lift up your mood and is a perfect balance of healthy and delicious food .Healthy and simple, you will end up having salad days in the week for sure.Not just as a salad but as a whole meal in itself.And of course very chic and trendy that can create those wow moments , when guests come visiting.

Sweet Potato and Black Rice Salad
Sweet Potato and Black Rice Salad is a colorful salad full of flavors and textures. Dominated by roasted sweet potatoes and black rice, it has kale leaves , apples and walnuts with a honey mustard dressing.

  • Black Rice 2 cup
  • Walnuts ½ cup
  • Apples 1 chopped
  • Roasted Sweet potato 2 cups cut into cubes
  • Pomegranate ⅓ cup
  • Kale leaves 2 to 3 cups chopped
  • Honey 2 tbsp
  • Vinegar/ lemon juice ¼ cup
  • Olive Oil ½ cup
  • Mustard sauce 1½ tsp
  1. For the honey mustard dressing:
  2. Mix olive oil, vinegar or lemon juice, honey, mustard sauce and keep aside
  3. Blanch the kale leaves and keep aside. This is to make them soft
  4. Roast the sweet potato cubes in 180 degrees with salt and black pepper for 15 mins
  5. Cook the black rice and keep aside
  6. In a bowl, add kale leaves, walnuts, roasted sweet potato cubes, Black Rice, pomegranate, salt.
  7. Pour the dressing over .
  8. Mix and serve
