Apple cinnamon cake with caramal sauce

An anytime cake,  this is a richer ,fuller version and perhaps a distant cousin of the traditional english tea cake..sweet and moist with the soft bite of the apples coupled with the fragrant spice ,this can be the showstopper of your evening hi tea party or an Easter extravagance as well.
I chose them for Easter this time..Bunny cakes ,carrot cakes, springtime cakes ,ham muffins strawberry rolls, bunny cookies and   names galore that fills up an indomitable list of Easter treats apart from the ubiquitous Easter eggs.
For keeping things simple I though this cake would do justice  to a simple hi tea occasion..and glazed with caramal sauce this simple treat catapults itself to an awesome wonder of a gourmet sinful delight.
Surprising how a simple dish makes upto a wow factor just with a few elements.A take from the traditional cake this calls for chopped apple and ground cinnamon which are the highlighting factors..I added a pinch of nutmeg for that extra effect..Pretty much nothing else barring the list of ingredients that go into the making of a tea cake.Simple technique, outstanding taste..
All purpose flour – 1 .5 cup
Baking powder-2 tsp
Milk -1/2 cup(if you want  a softer  crumb you can do with 1 cup milk as well)
Cinnamon powder- 1 tsp
Nutmeg powder -1/4 tsp
Eggs -2
Butter-1/2 cup..I used 1/4 cup, which suits me fine
Vanilla essense-1/2 tsp
Sugar -2/3 cup
Brown sugar-1/3rd cup
For the Caramal sauce
2 cup (1 stick or 115 g) unsalted butter
1 cup (200g) dark brown sugar
1/3 cup (80ml) heavy cream
1/4 teaspoon salt
2-3 cups (240-360g) powdered sugar
  • Beat the egg ,butter and sugar until fluffy. Add the vanila essence
  • Add the cinnamon and nutmeg
  • In a separate bowl mix the flour and baking powder, seive and keep aside
  • Chop the apples into fine pieces and keep them with brwon sugar and a little butter.Warm them just a bit so that the sugar and butter melts(this is totally optional, you do not need to warm them or even add butter, I did it for the extra taste)
  • Now add the flour mixture to the egg batter and mix with milk.
  • Grease a baking tray and pour half of the batter into it
  • Pour the apples mix over the batter and dro teh rest of the batter over the apples
  • Follow up with the final layer of apples over the batter.Add additional sprinkle of broen sugar if you wish.Push teh apples mix slightly so that it merges with the batter
  • Bake in  a preheated oven under 180C for 35-40 minutes until done
  • For the sauce: warm all the ingredienst over low flame in  a pan until you reach the consistency of a sauce
  • Pour the sauce over the cake while serving
Plz note: there are two ways of assembling the cake
  • Place half of the batter into the greased baking tray.Pour half of teh apple mix over it. Then place the rest of the batter over it followed by the final round of the apple mix. Push the apple mix slightly into the batter. this gives a layered effect when done
  • Second option is to just mix in the apple mix along with the batter
  • Also the mix of apples and brown sugar with butter is absolutely opional. You can just do with a mix of apple and brown sugar that can directly go into the mix. Addition of butter and warming them is totally an option That I thought gives a certain distinct texture and taste. You can avoid it and just stick to a mix of apple and brown sugar


Beautiful texture,with the moistness of the apples that balances the texture of the cake crumb,the combo of fragrant  nutmeg and cinnamon spice gives that extra zing..a subtle undertone of these autumn spices is what you can taste while you bite into your peice of cake. Flavorful and moist and fluffy.It stands on its own as a cake with no frosting or ganache required. But caramal sauce and apples being a classic combo , the cake  feels so complete with the balance of the sweet and the salty taste..perfect for my cup of tea..the sweet and salty taste compliments the cake to an extent that i assure these will vanish off the plate in a jiffy..of course you can add any other sauce or do without a sauce but i thought this glaze gives out a wonderful flavor, leave aside the dramatic presentation.
For all you tea cake lovers or even the homemade cake fanatics this one is one of the best homemade tea cakes..the apples that plays hide and seek within the cake with its underlying fragrant spices is all so complete on its own..Perfection at its best.
