Gifts, shopping, plum cakes, candy canes,turkey and holidays..Isnt it fun????? Which is why christmas is always beautiful…
Trying not to sound politically correct, but i can state without doubt that india being a democratic country seems a blessing .Be it Diwali, or christmas, it is celebrated withe equal grandeur and style. Christmas comes in a package of wonderful parties with lunch and dinners spreads across lounges, restaurants , while malls and retail stores are ready with offers ad gifts for customers in plenty.. At least thats how strong the festivities are in mumbai during christmas and new year’s.Not to mention about Goa which is truly outstanding.. having spent christmas and new years in goa for quite a few years, I can vouch for its splendid celebrations which are absolutely awesome and a wonder to marvel at.
For me Christmas came a little early this year as i had my turkey feast a few days back already…With turkeys available across the super markets this year in Mumbai, it wasnt that difficult like otherwise.Hence I couldnt cooking up a turkey even before christmas arrived. Shall post that recipe sometime later.
And now , I had to complete my christmas meal with some wonderful cookies and a rum cake..So in totality, my Christmas is complete with a feast of turkey, butter orange cookies and a rum and raisin pudding cake.. The best for me is the cake though which is worth a try i must say. A beautiful warm dessert for the cold weather outside.Not just a cake but a pudding on its own too with a beautiful alcoholic sauce.
Refined flour- 1 cup
Cocoa- 1/4th cup
vanilla essence- 1 tsp
orange juice(optional)- 1 tbsp
Rum- 2 tbsp
raisins and walnuts- 1/4th cup(You can add more )
coffee powder in boiling water- 2 tbsp
milk- 1/2 cup
butter/oil-2/3 rd cup
Sugar- 1 cup
baking powder – 1.5 tsp
baking soda- 1/2 tsp
salt- a pinch
Dark cooking chocolate grated (optional)- 1/4th cup
For the sauce
boiling water- 1 cup
Maple syrup- 1/2 cup
honey(optional)- 1 tbsp
cocoa- 1 tbsp
- Shift together the flour, baking powder, baking soda, cocoa,powdered sugar,salt
- Now add the oil, , milk, vanilla essence, orange juice, walnuts, raisins and mix into a thick batter.You can add cooking chocolate if you desire
- Grease a cake baking pan and preheat the oven in 200 degrees
- Pour the batter in the baking pan
- In a seperate cup add boiling water, and add the rum, maple syrup , honey and cocoa.Now pour this mixture over the cake batter.Do not worry of the sauce covering the top of the cake since it will settle down eventually
- Bake for 30-35 minutes
- Serve with the sauce warm
Absolutely moist , soft amd tender ,with it own rum infused sauce this one is one of the best homemade rum cakes that i can vouch for. An impressive dessert that which has the capacity to catapult you to the level of professional bakers . .No vaunted claims , but you wont realize unless you relish the wonderful saucy texture.Perfect to go during winters.
A gorgeous cake and its own pudding..isnt is just wonderful? While the cake has a slight hint of rum, it is the combo of the maple syrup and rum that creates a wonderful thick gooey sauce that blends with the cake does giving a wonderful alcoholic taste..I have added an extra tinge of fresh orange juice .I love the flavour of orange with chocholate..You can avoid if you wish.Bit the highlight is the alcoholic sauce that elevates this dessert to another level, finest in baking treats i must say..
The rum and the mayple syrup adds that extra flavour to this irrisistable dessert which is incredible..Unmatched.. Outrightly delicious and smooth,the sauce is intoxicating as it blends and settles at the bottom beautifully which helps in working out a dramatic presentation while serving..You could add in a little chocolate ganache as topping as well which would give out a mousse effect to the saucy pudding cake.
A intoxicating sauce, a bit of moist cake and a topping of a scoop of vanilla icecream seals this wonderful winter dessert..Ideally to be served hot, with a scoop of cold icecream,, it tastes equally good as a cold dessert too, although i like mine warm during winters beneath layers of wollens; a perfect finish to your winter party..
