Ignore the unprofessional look of the pic.The awkward looking cup cake with a beautiful ganache deliciously rich topping north withstanding; yet standing without its decor ,devoid of its bare essentials that which gives this cake it’s name n shape..it’s butter greased paper cup..Well I know that the paper cup is the core of the cake that mostly synonymizes and gives its beautiful shape.But my cup cakes are special.They are not chocolate or vanilla but a combo of both. Beautifully cut thru the centre the cake stands beutifully with two different looking sides of a chocolate flavour n the other part vanilla.That’s the beauty which is hidden by the butter paper cups..Hence the look without the paper cups to showcase its beauty, the beauty of this black and white up cake with the most decadent chocolate ganache..And they taste phenomenal too..ganache infused cup cakes to be precise
I have a weakness for cup cakes coz more then the taste they seem cute.With a little frosting on top it seems just so perfect to satiate the sweet tooth.The technique here although a little taxing yet spell bounds you with its resplendent outcome once baked..and top with with a beautiful ganache completes this cup cake..And know what?It takes just a minute and a half for these sweet cravings.
For the lesser known audience, Ganache is a French term although its origins are not very clear with competing paternity claims from Switzerland and Paris. Widely used in the pastry kitchen, Ganache refers to a smooth n velvety texture kind of a sauce made of chocolate and cream which can be used as a glaze,sauce, filling or even icing depending on its texture. Extremely versatile, I love ganache for the fact that it takes care of the need for either a filling or an icing or even a sauce. When hot and liquidish, this is poured over cakes and can run as your glazed soft smooth ganache and once cooled,you could just pipe it up and decorate like icing or use them as fillers too.Isnt that great? .In fact refrigerated ganache is best used for fillings and frostings or formed into chocolate truffles as well.Technically,it is made by heating cream and pouring it over chocolate of any kind to get a runny sauce.Dark or white chocolate can be used with heavy cream to make ganache and liquers can be used for flavorings. Sometimes even butter is used for a shiny glaze.I haven’t used here but.
Its so easy to prepare which is why I love ganache not to forget the deliciously rich gooey chocolaty taste .I feel this goes as a form of icing on a cake really well..Delcious n rich this is a fancy take on the butter-milk-cream icing.If creativity is your streak then you could use ganache fr toppings normal cakes as well supported by butter icing.The smooth texture of the ganache just melts in your mouth as you try. Relish thetaste of the melted chocolate In the cream.It also can serve as your pudding sauce with your slies of cakes,that taste amazing too..So one ganache and many ways of savouring it.Thats the charm.In fact I often make another amazing recipe which is the mouse with ganache topping.Will try and post that recipe sometime later
And while making the ganache, the propotion of cream to chocolate really depends on whether you want it to be a sauce or a filling or an icing or just coating or even a truffle..But the basic ganache uses equal propotions of chocolate to cream.Its amazing really that just chocolate and cream can create so many varied types of frostings, fillers and icings..What am using here is the not so thick ganache and the most plain and simple for a layman to master the skill and relish his own creativity
Cup cakes have always been my favourite, esp coz they look so cute..The icing n frosting on top makes it look deliously rich,even on a visual platform it scores higher then you regular cake.Also the two taste layers go together very well.
Since Ganache is my hero here, I have two different types of cup cakes with ganache ..Beautifully moist and rich.You can choose your pick. My favourite is the second one though, the chocolate cup cake with rum infused chocolate ganache
1. Black and White cup cakes with ganache
for Black and White Chocolate cup cakes
1/4 cup butter
1 cup flour
1/2 tsp baking powder
1/4th tsp baking soda
a pinch of salt
1 1/4th cup sugar
1/2 cup milk
1/2 tsp vanilla essence
2 tbsp. cocoa powder or 1 ounce melted dark chocolate( I used cocoa powder)
6 ounces white chocolate
1/2 cup cream
For cup cakes:
Beat butter and egg whites until fluffy and add the sugar and beat well.
Meanwhile grease 12 muffin cups .
In a medium bowl stir together flour, baking powder, baking soda and salt.
Pre heat oven to 350 degrees F. In a large mixing bowl beat butter and eggs and add sugar, vanilla essence and beat until smooth and fluffy.Alternatively add flour mixture and milk and beat until well combined
Transfer half the batter to a medium bowl, stir in cocoa powder or melted chocolate. Fill each muffin cup about two-thirds full, spooning chocolate batter into one side of cup and white batter into other side of cup.
Bake for about 15-20 minutes or until tops spring back when lightly touched. Remove and cool
Spread white ganache onto tops of cupcakes. Let stand for some time in room temperature until ganache is set.
for microwave cooking
I used micropower since that takes much lesser time, just about 1 minute 30 secs and they are perfect.
No preheat required. just put in the cup cakes in micropower and set it for 90 secs.Your beautiful fluffy cup cakes are ready. Follow the same process of the ganache frosting
I suggest the microwave power cooking coz its extremely fast and easy..90 secs to be precise
Place chocolate in a medium heatproof bowl; set aside.
Place cream in a small saucepan over medium heat and bring to a simmer. Pour over chocolate and let stand until chocolate has softened, about 5 minutes.
Add 1 tbsp. butter if you desire and stir until smooth. Let cool slightly before using.I haven’t used butter here
2. Chocolate cup cakes with dark chocolate rum infused ganache
Another variety of cup cake that I made was the chocolate cup cakes with rum infused dark chocolate ganache topping.Just a tad difference in the list of ingredients and an absolutely dark and rich chocolate cup cake with the most delightful melt-in the mouth alcohol flavoured ganache glaze
Chocolate cup cakes
flour- 1cup and 1 tbsp.
cocoa powder- 3 / 4 tbsp.
baking powder- 1 tsp
baking soda- 1/4th tsp
coffee powder- 1/2 tsp in little warm water
salt- a pinch
warm water- 1/4th cup
butter/oil- 1/3rd cup( I used oil)
vanilla essence- 1 tsp
1/2 cup cream
6 ounces dark chocolate
rum- 1 tbsp.
For the cup cakes:
Line a standard cup cake pan with 12 baking cups
Preheat the oven to 350 degrees
Shift together the flour, baking powder, cocoa powder,baking soda, salt in a bowl
In another bowl, combine the eggs, vanilla essence sugar and butter and blend with a hand blender until smooth
Add the coffee powder to a little boiling water and add to the eggs mixture
Pour in the flour mixture to the eggs mixture slowly and add milk, water , bending it to make a smooth batter and beating until well corporated.
Bake for 15 minutes until done. Cool and spread with the ganache
For microwave cooking
No preheating required, put the cup cakes under micropower of 180 degrees for 90 secs.They come out perfect. Really no need of putting in a oven.
Plz note, that the use of coffee powder is used to enhance the dark color and flavor.There is really no taste of coffee that soaks in.
Place the chocolate into a medium bowl. Heat the cream in a small sauce pan over medium heat. Bring just to a boil, watching very carefully because if it boils for a few seconds, it will boil out of the pot. When the cream has come to a boil, pour over the chopped chocolate, and whisk until smooth. Stir in the rum if desired
Absolutely soft and moist with the rich melted ganache these are treats to wow anyone, or rather are the perfect mouthful.And the amount of time that they take to bake up, you can just whip them up ina jiffy even when your guests have arrives and satiate their taste buds for that something sweet..A perfect finish for your sweet cravings I say..
