09 Jun Banana Pancakes with Maple Syrup
Melt the sugar and butter in a frying pan and place the sliced bananas in the pan. Cook for a minute or so on each side (until golden) and carefully flip over. Add a splash of maple syrup which will make a nice sauce.
- In a small bowl, combine the flour, baking powder, vanilla essence and salt. In another bowl, combine the egg, milk, oil and syrup; stir into dry ingredients just until blended.
- Pour batter by spoonfuls onto a lightly greased hot griddle/pan; turn when bubbles form on top of pancakes. Cook until second side is golden brown .
Assembling your pancakes:
Put your bananas inside the pancake, roll up and dollop over some whipped cream(if you wish).. Drizzle additional maple syrup and chocolate sauce as toppings and serve.
I used dollops of orange marmalade alongwith the bananas and topped with a generous amount of maple syrup and chocolate sauce.. You might want to add a dollop of vanilla ice cream by the side..
Easy and perfect is what I would summarize ..Takes even less then 15 minutes to create this beautiful looking pancake. Blue berries, strawberries, seasonal fruits or any other filling could transform the taste of this beautiful pancake to the level and flavor that you desire for.
