Chicken Salami and Vegetable Salad

A healthy and scrumptious salad..A full meal in itself.. Salads although a side dish can very well be healthy, juicy, yummy and a comforting meal in itself..And really the amount of salads that you could work up with various combinations is amazing..Raw salads are so healthy in the fact that it has all the nutrients intact,,it just is too good for the system..

As for me while i was never too much of a salad person,except if its really tasty and fulfilling..And this one with chicken salami  it is wholesome meal.And many a times, with a desire to just have something light, salad just suits the bills..In fact the renditions of various salads are so fascinating that even rice salads are an extremely delight for the ones who love rice but perhaps avoid for the sake of the carbs. Either with rice, garden fresh veggies and a fulfilling delightful dressing like mayo it just is sometimes heavier then even a whole course meal..

Nevertheless, this one’s my dinner today, and am penning down even as i relish every spoonful .Its so nourishing that you really dont need anything else..

And honestly on chicken salami and the sausages they have their own taste and really cant be modified to give a different taste, in fact you tend to loose out the flavor if tried to experiment.Hence the best that they go is either sautéed or added in sandwiches, burgers or great salads..Salads with frozen chicken is my favorite , because its just not light but gives you the levy to use the kind of veggies you want to your liking with high calcium , protein and other nutrients that you desire for.. But I still feel the dressing for the salad is the trick..the same veggies can be turned around to a completely different taste and flavor with myriad dressings.. Although my favorite dressing is always the mayonnaise and the mustard, however the one that this recipe consists of is another favorite too.A little oriental , it gives out a sweet and tangy taste , with the exotic aroma of the lemon grass engulfing..

So here it is absolute fast one, just that you need the stuff that you want to eat..And for working l busy professionals, this one”s a handy when during one of those stressing tiring days..

Chicken salami- 1 cup sliced and sauted
Peas- 1 cup par boiled
Snow peas- 1/2 cup(optional)
Broccoli florets blanched- 1/2 cup(optional).I didn’t use since I didn’t have the in stock
Shredded cabbage-1/2 cup
baby corn- 1 cup boiled
ginger(grated)- 1/2 tsp
garlic(chopped)-1/2 tsp

For the dressing
1 tbsp red chilli sauce/thai chillli sauce
1 tsp honey
1tbsp lemon juice
1 tsp grated orange rind/orange juice
1/2 tasp brown sugar
1/2 tsp red chilli powder
salt and pepper to taste
lemon grass-the white part chopped
Thai tamarind sauce(optional)-1/2 tsp

For garnish
tomato slices

Prepare the dressing by mixing all the dressing ingredients. Mix all the salad ingredients in a salad bowl.Pour the dressing over. Toss gently. Garnish with tomato slices or lemon wedges.

For rice and chicken salad

Just add 1/2 cup boiled/steamed rice(white or brown) to the salad and its needs no connotation to express just “WOW”..An absolute delight of a meal..

See, isnt it simple? And you can even add  rice to the bowl and transform it into a healthy wholesome salad.. In fact this is so simple that you could just make this as you finish reading my post..
