Arabic Chicken Pulao is a mild version of Pulao with the dominating flavor of whole spices .I am always amazed at how many ways there are to cook rice,especially even amongst Indians we cook rice in myriad ways, each recipe almost the same way albeit variations in the medley of spices used.Pulao is one such easy variation of rice which also has its different versions just like its earthswhile cousin , Biryani  which boasts of different renditions. Pulao,  for the record,is a familiar name in the south Asian continent( in Afganistan, Nepal, India,Pakistan, Bangladesh, Iran), the same is known as pilaf as well.
This version of pulao , known as Arabic Chicken Pulao is a mild version with the spices giving out a flavorful aroma. This preparation of pulao falls in my mom’s list of her signature recipes. My mom is a stupendous cook, and hence my inherent, profound  passion for cooking; having seen her work up amazing dishes at home while in my growing up years. She would walk through many cookbooks,magazines and have cut outs of articles in newspapers and create her own recipes. This recipe of Arabic Chicken Pulao I guess is a take- off from some magazine ,nevertheless it is such a savour’s delight that I thought of sharing in my blog, also for the reason that with a minimal spices, it creates an unique flavorful  taste.

This is a mild recipe cooked with special flavorings-spices. All these impart a lovely aroma to the rice.A very comforting one pot meal for the family. The medley of spices gives out a scintillating aroma, enough to make you hungry. The juices of the chicken percolates into the rice to give out a succulent distinct flavor. A winner all the way, try this out with a basic Chicken curry.

All in all the gravy with the pulao is a delicious comforting meal on a moody day to lift you spirits.Either for Eid celebrations or otherwise this is a delicious and a warm comforting meal.

A mild version of Pulao called Arabic Chicken Pulao, derives its wonderful flavor from the whole spices.The chicken pieces are cooked with the rice and infused with minimal spices, just gaining a rich white color of the pulao and a dominating aromatic flavor of the whole spices

Ingredients
  • 250 gms Chicken pieces
  • 2 cups White Basmati Rice(tea cup)
  • 2 tsp ginger garlic paste
  • 4 black cardamoms
  • 6 cloves
  • 1 inch cinnamon
  • 1 star anise
  • 2 green chillis chopped
  • few coriander leaves(chopped)
  • 4 tbsp oil
  • 1 big onion sliced uniformly
  • 1 small tomato
  • Salt as per taste
  • 2 cups hot water(or as required per the exact quantity of rice used) -for the rice
Instructions
  1. In a pan add the cardamoms, cinnamon,cloves, star anise. When they darken a bit, add the onions and fry till transparent.
  2. Add ginger garlic paste, green chillis and chopped coriander.
  3. Fry and add the tomato and keep frying.
  4. Add the chicken and stir fry till chicken is opaque and add two
  5. cups of water.
  6. Add salt at this stage and bring to a boil
  7. Cover the pan and let the chicken cook under low flame for about 15 mins
  8. if using the pressure cooker, close the lid and cook the chicken till 80% done
  9. Open once the chicken is 80% done
  10. Add the rice and water according to to the amount that would be required to cook the rice.
  11. Bring to a boil and lower the flame and cook till rice is done,
  12. For the pressure cooker method, close the lid and cook as per instructions for cooking rice.
  13. One whistle on high flame followed by 5 minutes on low flame.
  14. Let it release pressure on its own.
Notes
The pulao achieves a rich white color since there is not much spices use
The flavor of the whole spices is what gives its unique taste,
