As summer winds down, this recipe of mango Cheesecake Frozen Yogurt is for that final closure, celebrating summers and its produce of luscious mango desserts.
I was desperately trying to hang onto my last stock of mangoes for the season before I bid adieu to this beautiful summer fruit. And this recipe is a celebration as we close down on summers and await ,these beautiful gorgeous yellow beauties next summer.With rains cooling off the weather , this one is one such dessert that spells magic even on a rainy day with its creamy decadence and unique pairing of a cheesecake and frozen yoghurt .
Frozen yogurts are an amazing treat as a dessert for the calorie conscious souls. A diet friendly dessert, they do not have any fat contains nor sweeteners, just a blend of natural fruits and yogurts . Guilt free and healthy,the sweetneess comes from natural fruits and honey, and hence is an amazing treat for the ones who count their calories before they eat.
This recipe is an extension of the frozen yogurt inspired by a mango cheesecake flavor.A quick and easy summer dessert, this mango cheesecake inspired frozen yoghurt is a delicious, creamy, luscious incredibly smooth icecream like dessert.
Clearly this mango cheesecake flavored frozen yogurt can be aptly anointed as the epitome of mango desserts .Unique and a distinctive revelation, the mango flavor is perceptible so is the cream cheese texture.Bursting with flavor, it is made with just a few ingredients and no ice-cream maker.All you need is a food processor.Its that easy. Mix and blend everything together. Chill and serve.
Creamy and smooth, the greek yogurt, cream cheese and mango forms a formidable blend to create a winning rich texture. Add to it the crumbed cookies, and it truly incorporates the flavor of a cheesecake. But if you wish for a still healthier version, then you can avoid the cream cheese and the crumbs, what you are left with is a gorgeous looking Mango frozen Yogurt that can be indulged with a guilt free feeling.
I have added a little lime juice as well. This I think really brings out a beautiful flavor to the overall dessert. Lime juice and Mangoes is anyways a beautiful combination, and I try and incorporate most mango led desserts with a bit of lime juice.To it a few drops of honey and it creates the most magnificent tangy-sweet flavor.
I mostly use Philadelpia cream cheese for my cream cheese desserts, however this one is made with Dlecta Cream Cheese. Gives out a fine texture. Creamy and smooth , its almost perfect for any kind of desserts that feature cream cheese. I have also used plain Greek yogurt from Epigamia
Creamy texture, with a slight sweet-tangy taste, overly dominated by the flavor of the ripe mangoes, you really cant make out if its an ice-cream or yogurt. Fuss free and absolutely flavorful from the ripe mangoes, the cream cheese and greek yogurt just adds to the perfection of this dish making it extra creamy.This can definitely pass off as an mango ice-cream to guests without anyone raising an eyebrow. Its that believable. And I bet no one will know the subtle difference.
There is bit of science and logic here though while making this frozen yogurt and its essential to understand , for creating that creamy perfection.Greek yogurt is what needs to be used here. Devoid of the water content, it helps to form a creamy texture along with honey and the cream cheese. Honey is also added which helps to avoid the formation of ice crystals.Adding sugar instead of honey is a spoiler.
This frozen yogurt can be eaten right in a few hours. That’s the best time.You can also keep it in the freezer like you do for an Ice-cream and serve as an when required. But it will need some taming down time for the yogurt to soften to be able to be scooped out.
There are no thumb rules to the proportions used here. Highly adaptable as a recipe you could add your own portions depending on the desired taste .I have added 1/3rd cream cheese to a cup of yogurt, but you could possibly go upto 1/2 cup as well.Will need to adjust the sweetness though.
If the flavor of mangoes does not warm up to your palate, or if you wish to recreate this seasonal beauty during the off season, you can swap the mangoes for any other fruit . Blueberries, strawberries, bananas , chocolate, peanut butter, just about anything that you think pairs well with yogurt as a defining taste. Just mix, blend and freeze .

- Ripe mangoes 2 cups cut in cubes
- Creeam Cheese ⅓rd cup
- Greek Yoghurt 1 cup
- Honey 4 tbsp
- Lime juice 1 tsp
- Biscuit Crumbs(20 pairs of Parle G/Digestive biscuits)
- Few frozen mango cubes for topping(optional)
- In a blender or food processor, blend the mango cubes and make a puree
- Keep aside
- In the same blender add, cream cheese, yogurt, the mango puree, lime juice, honey and blend until smooth and creamy
- In a airtight freezer friendly container,arrange one layer of the frozen yogurt mix.
- Top with some biscuit crumbs
- Cover it with another layer of the yogurt mix
- Top it with a few frozen mango pieces
- Sprinkle some more biscuit crumbs over it. Dont cover the top, just sprinkle
- Freeze for 4 hours
- Serve chilled scoops of Frozen Yogurt
For making frozen yogurt, all you need to do is cut mangoes into cubes, zip lock in a plastic bag and freeze it overnight
