30 Sep Cranberry Mug Muffin
I love mug muffins . They are not just a quick way of serving individual portions but an amazing dessert or a breakfast snack that takes just about five minutes to serve up on the table.
Delicious, soft, and tender, the cranberry mug muffin that I am making today is just a basic mug muffin with the additions of luscious, juicy cranberries( I have added dried cranberries). And just like other mug muffins, this recipe does not really follow the same consistency and texture of a regular muffin, but is an easier solution to a quick sweet craving or when sudden guests arrive, with not much time to bake a full batch of muffins.
And then, it looks totally cool to serve them to guests as well.High on visual appeal, the fancy treatment of a mug is high on aesthetic value more then its taste. Pair it with a cup of strong tea or coffee, or as treat for kids or an anytime treat, it is soft, moist and flavored with cranberries.
You can choose to add in any flavors if not cranberries. Blueberries, Strawberries, choco chips or any thing else that you think can compliment this muffin can blend well in working our a fine taste.
I have used dried cranberries here , that imparts a certain burst of tangy flavor to the soft muffin.
And its so easy to prepare that it does not even follow a process of cooking.All you need is a few basic ingredients and a microwave. Just mix up everything in a mug, put in the microwave for a minute and its done .
My microwave took about a minute but you will need to check the temperature settings of your microwave.Hence the easier way out is to keep checking after 30 secs.
Since this muffin doesnt really follow the taste and texture of a regular muffin, you should not increase the ingredients beyond 2 servings, for the taste and texture will cease to exist since the mug will not be able to hold on to such a large quantity,and also the depth of the mug will not allow the muffin to be baked uni formally.
Hence the ideal portion is to keep it single serving mug muffin for maintaining the consistency of taste and the technique of using the microwave .
You can increase the quantity for two servings as well in case you have a bigger mug .In that case you will need to monitor the time require.Might require 2 mins.I have used a bigger mug as well , with double the quantity. Kept checking in between .Took about 2 mins in my microwave.

Delicious and comforting, this muffin is great to relish warm, straight out of the microwave. Also at times when you really do not want to bake up a huge cake and wait for 40 mins, this is a great option of indulging into a small dessert.

- All Purpose Flour(Maida) ¼th cup
- Baking powder ½ tsp
- Melted Butter 1.5 tbsp
- Milk 2 to 3 tbsp
- Vanilla essence ½ tsp
- Sugar 2.5 tbsp
- Salt a pinch
- Cranberries 7 to 8
- In a mug, take flour , baking powder, Sugar, salt and mix
- Add in the melted butter, milk, vanilla essence and mix well
- Add the cranberries and mix
- Put the mug in the microwave for a minute
- Serve warm and enjoy
