Beetroot Thoran is a part of simple everyday cooking from Kerela Cuisine.Trying to conjure up a kerela homestyle food meal makes you believe in simplistic treatment of recipes that results in outstanding taste.The Cuisine of Kerala is humble and simple, and mostly it is a technique of using the same ingredients in different permutations and combinations to arrive at completely distinctive dishes unique from each other. Grated coconut is the hero in their dishes that’s used copiously across all dishes. Curry leaves ,mustard seeds are omnipresent and indispensable.
Like almost every dish has common ingredients their cuisine is earthy and simple as well with a quick and easy method .My travel to Kerala gave me an insight into their cuisine to an extent that most often its Kerala inspired meals that are springing up in my kitchen these days.
It was like a culinary escapade for me as I learnt the unique dishes through various chefs and restaurants that I dined in. Pulliserry/Moru Curry,Puttu, Appam, Thoran are some recipes that warmed up to my pallate.
Beetroot Thoran is a simple and quick dry recipe that acts like a side dish to your meals.
Thoran generelly means strir fry in mallayalam which literally translates the dish to a stir fry beetroot recipe.So in a way it can be made with varied vegetables. Beetroot thoran,Cabbage thoran, Beans thoran are the most common ones but can be made with other vegetables as well.
In simpler terms its a stir fry dish topped with grated coconut, Curry leaves, Mustard and cumin seeds .
One must note that since this is a stir fry recipe no water should be added to cook the beetroot. At the most you can sprinkle some water and cover it to cook in its steam.Too much of water will spoil the taste and the crunchiness that’s required.
Absolutely gorgeous with the sweetness of the coconut ,it gives a crunchiness to the resultant dish.While the waft of the aroma of coconut oil mixed with the curry leaves, mustard seeds combination works like magic to lend deliciousness to the dish.
- 2 medium beetroot
- ½ cup grated coconut
- Turmeric powder1/2 tsp
- Cumin seeds 1 tsp
- Mustard seeds 1 tsp
- Green chilli 1 chopped
- Half of an onion chopoed finely
- Curry leaves 7 to 8
- Red chilli powder 1 tsp
- Garlic cloves 3 to 4
- Grate the beetroot and keep aside
- Take the coconut, turmeric powder, garlic cloves and blend
- In a pan add oil.When hot add mustard seeds.
- When they splutter add the cumin seeds ,curry leaves and onions.
- Fry and add the beetroot.
- Add salt and stir fry the beet root until soft.
- If it feels dry sprinkle a little water and cover to cook in its stream.
- Open and add the grated coconut mix and adjust salt.
- Stir until cooked.
