Garlic Prawns with Quinoa Salad - Shrimps with Quinoa
 
Prawns and Quinoa Salad or Shrimps and Quina is super quick and easy recipe thats not just healthy but Glutten free as well. Mix everything together and mix with quinoa for a perfect quick meal

Ingredients
  • Quinoa 1 cup cooked
  • Yellow bell pepper- ½ chopped
  • Red bellpepper half chopped
  • Onion 1 small chopped in cubes
  • Brocoli blanched a few florets
  • pomengranate seeds a few for garnish
  • boiled corn kernels ¼th up
  • Parsely- few
  • for the prawns/shrimps
  • Garlic grated 3 to 4 cloves
  • salt
  • black pepper 1 tsp
  • Paprika 1 tsp
  • Red chilli powder 1tso
  • lime juice 1 tbsp
  • for the dressing
  • Olive Oil 2 tbsp
  • Lime juice of 2 lemons
  • Sugar/ Honey 1 tbsp
  • Salt
  • Black Pepper
  • Green chilli chopped 2 to 3
Instructions
  1. Clean ad devein the prawns
  2. In a bowl, marinate the prawns with salt, black pepper , paprika, red chilli powder,lime juice. Keep aside
  3. Ina pan, add oil and add the marinated prawns . Stir fry , add the grated garlic. Stir and keep aside
  4. Cook the quinoa as per packet instructions
  5. In a bowl, mix the cooked quinoa,red and yellow bell peppers, corn, blanched broccoli , onions, salt and mix well
  6. Mix the ingredients of the dressing and pour over the salad bowl
  7. Top with the cooked prawns ,mix and sprinkle with parsley
