01 Mar Thandai Masala Mix for Holi / Instant Thandai powder
Thandai is a milk based healthy drink synonymous with festivals especial Holi, .
And thandai masala is what adds the flavor to the milk which is basically a combination of almonds, cashews, cardamons,melon seeds, poppy seeds,and spices. It is nothing but a mix of varied nuts and spices.
Holi, the festival of colors is a beautiful Indian festival celebrated across the country.Like every festival has its own identity in terms of not just its elements of culture,tradition and historic background it also has a special bouquet of sweets attached to each festival.
Likewise, Thandai ,a milk based coolant, made with milk ,almonds ,other nutsand spices is a drink that is relished during Holi especially in North India.
While making traditional Thandai takes a long time which is why the supermarkets are replete with instant thandai masala powder that needs to be mixed with milk to prepare thandai. This masala mix is nothing nut a mix of nuts and spices which can be easily prepared at home.
I generally prefer the homemade masala powder since its absolutely healthy with no additional chemicals and flavorings but just healthy nuts and spices.
You can add you own combination of nuts and make your mix.cashews and pistachios are not always used but i use them to.make it richer. You can also add rose essence or dried rose leaves for that fragrant aroma. But I choose to add a little rosewater in milk separately while making thandai or any thandai based dish. So my mix is simple and easy to store as well in airtight containers.
This masala can be used in thandai and any other dish that you might want to infuse with a thandai flavor like thandai cookies,thandai phirni ,thandai muffins,thandai cheesecake or even a pannacota. A little bit of creativity can create beautiful gastronomic flavors to celebrate the festival of Holi.

- Almonds ¼th cup
- cashews ¼th cup
- Pistacios 2 tbsp(optional)
- Poppy Seeds 2 tbsp
- Melon Seeds 2 tbsp
- fennel seeds 1 tbsp
- Black Pepper 1 tbsp
- Sugar ⅓rd Cup
- Saffron few strands
- Dried rose petals few.If you dont have , then you can omit this and add rose water to the recipe that you would make
- Blend everything together in a grinder into a fine powder.
- Sieve the powder until there are no lumps
- Store in Air tight containers
- For making Thandai, you can use 2 tbsp of the thandai masala mix
