While bananas don’t fall into one of my favorite fruits , yet these banana muffins are so overwhelming in taste that it almost manages to break my notion about bananas. Not overly sweet, with a subtle flavor of bananas, while choco chips lending that chocolaty crispiness to the overall moist taste; these are one of the easiest muffins that can be made in a jiffy with a perfect fluffy crust. Not much of a hassle, they are incredibly spongy and moist and can be made from your left over overripe bananas. I often tend to put bananas in my regular cake as well for this smooth spongy effect that ripe bananas manage to create.
Either as breakfast bites or tea time muffins, or on- the- go tit bits, they are perfect for anyone.If you love your banana breads then these will surely impress you. Kids or adults; they are way too pleasing to suit your sweet palate. Filled with the goodness of healthy bananas, they offer you that much needed nutrients. For a healthier version you can replace refined flour with whole wheat flour or oats as well.
Perfect in taste, thee fluffy sweet morsels are perfect as muffins, the choco chips add to the depth of taste and professional touch while the right balance of bananas makes it moist , and they can be stored for about 3 days ,but I bet they will be devoured in a day’s time. - Bananas- 3 overripe mashed
- Sugar- ½ cup
- Baking powder- 1 tsp
- Baking soda- ½ tsp
- Oil/Butter- ⅓ rd cup
- Milk - 3tbsp or ¼th cup
- Eggs- 2
- Vanilla essence- 1tsp
- Choco Chips- ⅓rd cup or more if your wish
- In a bowl seive flour and baking powder . Keep aside
- Beat the eggs, sugar and butter in another bowl
- Add vanilla essence and mashed bananas
- Add the dry ingredients to the egg mixture
- Add in Milk and make a smooth batter
- Pour in greased muffin moulds . Fill until ¾th
- Bake in a preheated over under 180 degrees for 20 mins
