Healthy and filling. A perfect breakfast , the Indian way. Not too heavy, nor oily and filled with the right nutrients of Oats..
Although oats and milk in the form of porridge is the most common form of breakfast variant when it comes to oats, most often I am almost averse to the idea of having a sweet version of anything at the breakfast table. For me breakfast connotes to a fulfilling not-so sweet form of an idea. Or it could be a part of the larger form of the breakfast spread but not on its own.
But health conscious that i am, and more so after the rough weather that i was into sometime back, I know that i need to feed in oats to my system for its sheer benefits of high fiber and vitamins and other nutrients that help boost my immune system and help me stay away from attracting cholesterol, sugar and diabetics primarily in future.. Hence I find out finer ways to make something interesting out of oats that which is salty , tangy, spicy, but satiating, ..Oats parathas, oats chilas, oats salted pancakes and even muffins are almost a regular feature in my kitchen. But my most favorite amongst all of these is the oats upma..A modern take on the earths while upma(made of semolina) that is a very common breakfast amongst many cultural cuisines of the country, especially the south of this amazing country. For me; this at times is an interesting healthy option that satiates me to the brim as a breakfast option.With veggies ,it is almost a satisfying full meal in itself.For me its my place of comfort.Healthy and nutrient rich, add up your favorite veggies and you get yourself a resultant amazing plateful of breakfast. Especially when on the go with no time, this is absolutely quick and does not need much preparation or technique.
Oats- 1 cup
Veggies(carrots/beans/capsicum)- 1/2 cup chopped finely
Onions- 1/4th cup chopped
curry leaves- 6-7
Black mustard seeds- 1 tsp
green chillies- 2 chopped finely
Cumin seeds- 1tsp
Roasted cumin powder- 2 tsp
water- 3/4th to 1 cup
salt- As per taste
red chilli- 1 optional
chana dal- 1 tsp
Grated cocoanut-(optional) 2 tbsp
- In a frying pan, add oil. When smoking hot, drop the mustard seeds and cumin seeds.When they crackle add curry leaves and the chana dal . Stir
- Now add the green chillies,chopped onion,chopped veggies , roasted cumin powder, chopped ginger, salt and fry for a while under low flame. I generally cover it for it to moisten by adding 1/2 cup water.If it gets dry, you can add the full 1 cup water and let the veggies cook
- Now open the lid, add the oats, stir fry for about 2 minutes .
- At this stage, add water, check the salt,and cover under low flame for a few minutes until the water gets absorbed and the upma attains its desired consistency.Mix in the coconut and stir fry for a minute until the coconut blends with the upma
- Serve with a garnish of coriander leaves
- The quantity of coconut used will keep enhancing the taste of the upma
Plz note: The amount of water used is your prerogative depending on how dry or moist or wet you want your upma to be. Also there is no rule about the amount of coconut to be used.It is just a taste enhancer is what I like to believe.The more you use, the more tastier it is
Gorgeous in taste, with the healthy nutrients of the oats and veggies in place , this is your perfect no fuss Indian one meal breakfast or a tiffin box lunch as well.This naive, boring, monotonous element that I often call it as suddenly breaks through the clouds of indifference and soars high to create magic in the form of a delightful upma. And if you choose to add coconut, it adds a different sweetness to the upna which is really divine. Even if you dont, this works up to a great satiating meal . And yes, since its a little heavy and dry, it might be best to relish with a coconut chutney if you want a complete meal. For me just a bowl of upma is good to go.
For me this is one way of sneaking this super food into my system and keep my cholesterol and sugar under control.. High in fibre content, oats,with its array of vitamins,minerals and antioxidants, aids in boosting our immune system and keeps many ailments at bay.
