Banana Pancakes with Maple Syrup

Moonsoons are here finally in Mumbai..While there is a cool respite from the heat, yet, the
heavy downpour this early morning has sabotaged all my sunday plans.. With work getting extremely hectic, I look forward to the weekend to complete my  personal errands..But with this rainy windy morning, as I realised that the morning will have to be spent indoors, I thought of cooking up some fantastic receipes..So pancakes with maple syrup it is for me for a warm breakfast to compliment the cool weather outside…..
Pancakes, I believe are one of the easiest of breakfast receipe to dish out..With   a variety of fillings that can compliment the pancakes, desirious to your taste palate, it can take the flavor and aroma of any fillings of your choice.
My choice of banana filling was just coz of the over riped spotty bananas that adorned my fruit basket. Before they rot and I use them as face packs, I had to find a way to gulp them somehow. Additionally I just got  a maple syrup as a gift yesterday.So then what better way then  to combine the banana and the maple syrup and create some glorious lip smacking warm pancakes??
  Servings: 5
Ingredients:
1 cup all-purpose flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1 egg
1 cup milk
2 tablespoons butter/ oil
3 – 4 tbsp maple syrup
1 tbsp sugar
2-3 bananas
1/2 tsp vanilla essence/cinnamon powder
Additional maple syrup
For frying the bananas
1 tbsp. sugar
2 tbsp. butter
Method:
Frying bananas:

Melt the sugar and butter in a frying pan and place the sliced bananas in the pan. Cook for a minute or so on each side (until golden) and carefully flip over. Add a splash of maple syrup which will make a nice sauce.

Pancakes:

  • In a small bowl, combine the flour, baking powder, vanilla essence and salt. In another bowl, combine the egg, milk, oil and syrup; stir into dry ingredients just until blended.
  • Pour batter by spoonfuls onto a lightly greased hot griddle/pan; turn when bubbles form on top of pancakes. Cook until second side is golden brown .

Assembling your pancakes:

Put your bananas inside the pancake, roll up and dollop over some whipped cream(if you wish).. Drizzle additional maple syrup and chocolate sauce as toppings and serve.

I used dollops of orange marmalade alongwith the bananas and topped with a generous amount of maple syrup and  chocolate sauce.. You might want to add a dollop of vanilla ice cream by the side..

Easy and perfect is what I would summarize ..Takes even less then 15 minutes to create this beautiful looking pancake. Blue berries, strawberries, seasonal fruits or any other filling could transform the taste of this beautiful pancake to the level and flavor that you desire for. Absolutely stunning , isn’t it??A scumptious, filler of a breakfast on a beautiful rainy sunday morning!!!!
